For the Holy month of Ramadan, Bombay Brasserie have crafted the perfect special set menu for Iftar. The menu dedicates a tribute to the flavors from the days of the Royal Moghul Empire, calling upon classic Indian delicacies with a Middle Eastern twist developed from ancient scripts during King Shahjahan’s Era. The recipes have been a long hidden secret and are amongst the only documents scripted in the entire Indian culinary history. Our chefs attempt to replicate the heritage of Indian gastronomy as a tribute to the years before by translating a few key recipes working in conjunction with students and professors of JamiaMiliaIsmaia University Delhi to have them translated. Highlights of the menu include Highlights of the menu include KofteShahi Mahi – royal fish kofta with saffron and spices, Kebab BaidaMurg – chicken kebab coated with egg white and glazed with goat fat and ZirBiryan – grilled meat (lamb) served with sweet‘itr’ fragrant rice. The menu calls upon classic Indian delicacies with a Middle Eastern twist to bring forth delicious hidden treasures from the royal ages.
